The Story
After three years of effort in designing a machine to separate finger lime pearls from their skin and seeds, we finally succeeded. This innovation led to the creation of finger lime caviar, the ultimate product of this unique fruit. To extend the typically short shelf life of the fruit and pearls, we quickly snap freeze them to minus 36°C immediately after harvesting. This method preserves the distinct caviar characteristics of the finger lime pearls and offers a convenient, ready-to-use product that can be placed back into the freezer for later use as needed.
Currently, our focus is on finding ways to further extend the shelf life of fresh finger lime pearls. We have successfully extracted fourteen different caviar colours and varieties—more than enough for even the most creative chefs to experiment with and enhance their dishes.
