Varieties assessed by Chefs

Observations Long and narrow, this fruit has a deep brown/mahogany skin and shell pink pearls.
Aroma Astringent aroma, suggests green mango and lemongrass with slight floral overtones.
Flavour Very firm pearls with a distinct ‘pop’ when crushed in the mouth. Strong unripe lime and unripe apricot flavours that is short lived on the palate.
Uses
  • Excellent in a ‘Gin and Tonic’ and any drink where a strong citrus element is required ie Mojito.
  • Would make an excellent garnish for Asian style duck dishes such as San Choi Bow
Yellow
Observations Pale yellow to green skin with lemon pearls.
Aroma Bright lemonade aroma with fresh and buoyant tones suggesting crushed lime leaves and a floral ‘nightime jasmine’ perfume.
Flavour Tiny, mild pearls that are thin skinned and pop easily, tasting like a mouthful of freshly made lemonade… also slight kiwi flavour.
Uses
  • The light, fresh flavour makes this finger lime perfect for topping a rich cheesecake as it will provide balance for a rich dessert without overpowering the flavour
  • Folded through a tropical fruit salad with mint, mango, lychee.
Observations Large oval fruit with a thick, mahogany leathery skin with two-tone pink-pale flesh pearls.
Aroma Very floral aroma like orange blossoms and young peach.
Flavour Sharp grapefruit flavour with a long, slightly bitter finish with overtones of green apple.
Uses
  • Fold through guacamole or chunks of avocado and fresh coriander as a salsa for rich curries and roasted salmon
  • Garnish seared scallops
Observations Medium finger sized fruit with a thin red-brown skin and pale lemon-pink pearls.
Aroma Aromas of unripe passionfruit and hints of rose make this a very floral fruit.
Flavour Flavours of unripe lemon and lemon zest abound with a long, slightly bitter ‘pithy’ finish.
Uses
  • The bitterness on the palate makes it perfect for rish Asian dishes such as caramelised pork belly with coriander and kaffir lime.
  • Sticky glazed salmon
Observations Bright yellow skin with green shading and green tinged pearls.
Aroma Herby and grassy aroma with a whiff of pineapple and kaffir lime.
Flavour Pomelo/grapefruit flavour – intense but brief on the palate. Firm textured pearls with no hint of bitterness.
Uses
  • Folded through cocktail sauce and served with prawns.
  • Fabulous on oysters with cocktail sauce.
Observations Small oval fruit in a red-pink thin skin with pale beige to pink shells literally bursting out of the skin when cut. Very easy to extract pearls.
Aroma Fresh aroma with slight medicinal overtones and hints of berry.
Flavour Exceptionally sharp, slightly bitter, elements of guava on the palate.
Uses
  • Fold through salad dressings
  • Garnish for fresh tuna with wasabi and soy
  • Fold through Salad Nicoise
Golden Nugget
Observations Long ‘chilli like’ shape with firm, leathery yellow skin and large, pale and glistening pearls.
Aroma Slightly floral with hints of orange blossom and medicinal herbs.
Flavour Fresh lemon/lime flavour with no bitterness . Not overpowering.
Uses
  • Serve with lobster and other cold seafood such as king prawns and bugs.
  • Garnish duck with rich sauces.
Pink Pearl
Observations Long, fat leathery fruit with brown shiny skin and large, defined rose pink pearls.
Aroma floral guava and dried pot-pourri aroma.
Flavour Large, dry pearls without any strong discerning flavours. Pleasant citrus tones.
Uses
  • The large pink pearls don’t provide a huge flavour hit but their lack of ‘punch’ makes them a perfect garnish for desserts such as Lavender or fruit flavoured crème brulee or mousse.
  • Very good for folding through a salsa for a citrus tone without liquid.
New Yellow
Observations Elongated yellow/green fruit with Skin easily bruised with very large Pale green pearls.
Aroma Lovely fresh clean lemon aroma.
Flavour Sharp, effervescent flavour like a mouthful of freshly squeezed lemon juice.
Uses
  • Crab cakes with coriander or salmon patties. The large size of the pearls and juicy lemon pop adds a lovely fresh element to rich fish patties.
  • Also lovely for garnishing sweet desserts such as Pavlova.
