About us

In 2010, I encountered finger lime seedlings at a Sunshine Coast nursery. The small, prickly bush, unlike any citrus I had seen before, piqued my curiosity. The nursery staff described the unique fruit it would produce: small, finger-shaped fruits filled with citrus pearls that resembled caviar and offered a burst of citrus flavour when eaten. I was immediately intrigued and purchased a tray of baby plants that day to bring back to my home in Melbourne. Despite being cautioned that this subtropical plant might struggle in Melbourne’s cooler climate, I was determined to give it a try.
The cool nights during late summer and autumn also revealed some fruit with distinctive colour profiles, such as Pink Ice finger lime, a feature I recognised from my background in viticulture.

the story

After three years of effort in designing a machine to separate finger lime pearls from their skin and seeds, we finally succeeded.This innovation led to the creation of finger lime caviar, the ultimate product of this unique fruit. To extend the typically short shelf life of the fruit and pearls, we quickly snap freeze them to minus 36°C immediately after harvesting. This method preserves the distinct caviar characteristics of the finger lime pearls and offers a convenient, ready-to-use product that can be placed back into the freezer for later use as needed.

We are one of the largest growers of Australian native finger limes, offering a diverse and unique range of varieties with exclusive sizes, colours and flavour profiles. Famous for its use in world class culinary kitchens, the citrus caviar derived from finger limes has become a popular premium ingredient for many chefs across the globe.
Beginning as a small backyard venture in 2012, the last decade has seen OZ Finger Lime expand to several sites including a large orchard in Northern Victoria of over 5000 mature trees. Despite finger limes being a subtropical fruit usually grown in warmer climates such as Queensland and Northern NSW, through many years of research OZ Finger Lime has pioneered the production of this fruit in the cool climates of Victoria.
Being a family business, OZ Finger Lime is passionate about finger lime production and is a key board member with the Australian Native Fingerlime Alliance (ANFA) in providing expertise and knowledge on cultivation, pest management and the development of new varieties.
